Truffle Protein Balls

TRUFFLE PROTEIN BALLS

Ingredients   

1 cup of dates soaked in hot water for 15 minutes (if using medjool dates it can get soaked for less time)

3/4 cup of pistachios

1/2 cup of cocoa powder

1/4 cup of liquid sweetener (honey or maple syrup)

1/2 cup of chocolate protein powder 

Splash of vanilla 

More cocoa powder mixed with powdered sugar to roll them in (optional)


Cooking Instructions   

In a food processor or HIGH powered blender pulse the pistachios until broken up.

Add in the dates and pulse until it starts to become a sticky cohesive mass. If you have a food processor you can mix the rest of the ingredients and pulse until its super together and no big chunks. If you have a blender where everything is kind of sticking to the bottom, take the mixture out and put into a big bowl and hand mix in the rest of the ingredients and mix until its sticky and holds together, if its not holding together you can add a little hot water or more liquid sweetener. Roll into balls, and then roll into your mixture of powdered sugar/cocoa powder. 


Storage

Keeps in fridge for a few weeks, or freezer for a long time.
