Ingredients
Juice from 1 can of pineapple chunks (save the chunks if you love pineapple)
½ cup of dark brown sugar (or you could use maple syrup)
½ cup of ketchup
1 tbsp of soy sauce or coconut aminos
1 tbsp of white vinegar (this is preferred, but ACV or double the amount of rice vin)
1 tbsp of cornstarch or 2 tbsp of arrowroot or tapioca starch.
Meat of choice - Pork Tenderloin or Tofu are my fave.
Garlic and Onion Powder for seasoning the meat
2 bell peppers large diced
1 onion large diced
Cooking Instructions
Cut your meat or tofu, if using tofu make sure to press it for 30 minutes if you have the time.
Season the meat/tofu with garlic and onion, I tend to not add salt as the soy sauce or coconut aminos has a lot.
Cook the meat/tofu until crispy and cooked through. Adding the large diced peppers and onions at the very end, you want to quickly char them but you want to keep them crunchy.
Mix the sauce ingredients well, making sure there are no clumps from the cornstarch and add at the end of cooking the meat and veggies.
Enjoy with rice or noodles
