Ingredients
3lbs of mixed root vegetables:
Purple sweet potato, turnip, parsnip, sweet potato, regular potato etc.
1 tbsp of avocado oil (or neutral oil)
1 tbsp of mixed seasonings (adobo seasoning, all purpose) I like to use sea salt, garlic powder, and smoked paprika.
Cooking Instructions
Heat your oven to 425 - if you have convection roast that's a great option. Line a few sheet trays with foil and spray with cooking spray or lightly oil.
Wash your root veggies, & cut into fry shapes. (Peeled or unpeeled, I usually peel my potatoes but leave the skin on the other veggies.)
In a big bowl mix them all together with oil and seasonings of choice.
Lay in mostly even layers and bake until the edges are getting crisp. About 20-30 minutes depending on your oven.
