To make the perfect tofu let me tell you, you just need some books, a towel and a plate!
The key to cooking crispy tofu is to be sure to press it ahead of time. Even just pressing for 15 minutes makes a HUGE difference. The longer the press the firmer the tofu will come out also buy EXTRA FIRM tofu! And I suggest buying organic when possible. Silken tofu is not going to work here.
Take the tofu out the package please, and wrap in paper towels, or just kitchen towels if you prefer, then wrap in kitchen towels again over the paper towel, place on a plate and lay some heavy books on top, you can use any heavy object just be careful as the tofu drains it will shift and sometimes the heavy object can fall off. (totally not speaking from experience here)
Press for 15 minutes – until forever. Just kidding but the longer the better. Cut the tofu into cubes or squares, or really however you want.
Heat 2 tablespoons of oil in a skillet and fry, turning over to cook until each side is golden and crisp.
If you don’t want to fry you can bake in the oven, line a sheet tray with foil, spray or oil the pan, throw the tofu on there, bake at 400 for about 10 minutes, and then flip and put back in the oven another 5-10 minutes. Won't be as crispy as a pan fry but close!
Interchangeable for any dish that requires tofu!
Like my Thai curry, Korean tofu bowls, etc.
