Buffalo Chicken Pizza

Buffalo Chicken Pizza

Ingredients

Italian Blend Cheese (2 cups)

Shredded Parm (½ cup)

Fresh Chives Minced

1 Cup of Buffalo Sauce of choice

1lb of Cooked Chicken Breast (I’ll explain an easy method to cook)

Ranch Seasoning, or a blend or salt, parsley, dill, garlic and onion powder.

Chicken Broth if cooking the chicken at home. 



Cooking Instructions

Lemme tell you this can be made super fast if you want it too. 

If you don’t have time to make the crust (refer to  Homemade Pizza Dough recipe), you can get a store bought crust, you can buy a rotisserie chicken and shred the breasts and sauce them up. 

Of course coming from me I love to make it all from scratch, except I dig a store bought buffalo sauce. Like Noble Made or Franks.

A great way to quickly make shredded chicken breast is in the instant pot. 

I like to season the chicken with ranch seasoning or the seasonings listed, about 1 tsp each. 

Sear the chicken face down in the instant pot, until they get a nice golden sear, flip them over, add ½ cup of the buffalo sauce, 1 cup of chicken broth, pop that lid on and cook for 20ish minutes until shreddable. Drain the chicken, and shred.

Add in the remaining ½ cup of buffalo sauce to the chicken and mix well.


Directions for assembly.

  1. Preheat the oven to 450.
  2. Cook the chicken (or shred if using pre-cooked).
  3. Make the dough & roll the dough onto a sheet tray or pizza pan.
  4. Par bake the dough for 10 minutes.
  5. Add the Italian cheese blend, add the shredded and smothered chicken, add the parmesan cheese, and bake for 12ish minutes until it looks beautiful.
  6. Garnish with the chives. And enjoy!


Tip - if you have a stand mixer you can throw the breasts in there with the paddle attachment and it will quickly shred it. Otherwise use 2 forks.
